A Message from Terri Graham, Interim President, West and Downtown Campuses
The Walt Disney World Center for Culinary Arts and Hospitality welcomed its graduate and Disney Chef Camilo Velasco to the Downtown Campus for a cooking demonstration on Wednesday, November 3, 2021.
Chef Camilo, who graduated from our Culinary Arts program in 2010, has worked at some of the finest restaurants in Central Florida, including Norman’s at the Ritz Carlton, 1921 by Normal Van Aken in Mount Dora, The Ravenous Pig and Orlando’s AAA Five Diamond award-winning restaurant, Victoria and Albert’s at Disney’s Grand Floridian Resort and Spa. Currently, he is the chef for Disney’s Old Key West and Saratoga Springs Resort.
During his two-hour cooking presentation for the nearly 50 students and visitors, Chef Camilo prepared a Seared Skate Wing with an infused Dashi Flounder Ceviche and a Passion Fruit Orange Infusion.
“Students saw how understanding ingredients really does matter like we have been teaching them,” shared Chef Kenneth Bourgoin, professor, culinary management. “Sometimes they have to see it from another professional.”
